My grandma has always had a sweet tooth and a love for baking for friends and family. I remember one Easter my sister and I helped her make “Forgotten Cookies”. This was not one of her most frequent treats so I went several years without having one. Just before I went to university she gave me a notebook with several of her special recipes, and these cookies were one of them!

History: These are called forgotten cookies because you mix them up, put them in the oven and take them out the next morning… They are supposed to represent Jesus’ body being placed in the tomb.

 My Grandma’s Forgotten Cookies

2 Egg Whites
2/3 cup Sugar
Pinch of Salt
1 teaspoon Vanilla
1 cup Chopped Pecans
1 cup Chocolate Chips
1 cup Coconut Flakes (optional)
(I don’t remember Gma putting coconut in them but it is written in her recipe)

Beat egg whites until foamy. Gradually add sugar and continue beating until stiff. Add salt and vanilla, and mix well. Fold in pecans, and other ingredients. Preheat oven to 350°. Drop cookies by the teaspoon onto ungreased and foil covered cookie sheet. Place cookies in the oven and turn the oven off. Leave the cookies in closed oven overnight.

 I live a primal lifestyle now, but with a few modifications to this treat and I can still enjoy it!

Primal Forgotten Cookies


2 Egg Whites
2/3 cup Truvia or Splenda Brown Sugar
Pinch of Salt
1 teaspoon Vanilla
3 cup Chopped Pecans
1 cup Shredded Unsweetened Coconut Flakes

 Beat egg whites until foamy. Gradually add sugar sub and continue beating until stiff. Add salt and vanilla, and mix well. Fold in pecans, and coconut. Preheat oven to 350°. Drop cookies by the tablespoon onto ungreased and foil covered cookie sheet. Place cookies in the oven for 10-15 minutes, then turn the oven off. Leave the cookies in closed oven overnight.

The Primal version of this recipe has zero net carbs per cookie.
