In a bind and needing to whip up a tasty dessert?
If you have instant pudding mix and two cups of heavy whipping cream, you’re in for a treat!
I made this up a few years ago and it has been a hit with the family every time I deploy this (sneakily) easy dessert secret.

Easy Chocolate “Mousse”
- 1 pkg of Jell-o brand Instant Sugar Free Pudding (you can use any flavor, I’ve used Chocolate, White Chocolate, and Cheesecake)
- 2 C heavy whipping cream (16 fluid oz)
In a large bowl measure out the cream. Open the Jell-o box and the pouch inside, then sprinkle the pudding mix into the cream. Use an immersion blender (if you don’t have one, a standing mixer, hand mixer, blender, food processor or a whisk and elbow grease will get the job done) to mix the pudding into the cream – and whip the cream. Stop when the mixture has thickened up.
At this point you can serve it right away, or you can stick it in the refrigerator until you are ready to enjoy this super easy treat.



*Tip* Use a spatula to scrape the goodness out of the bowl into a quart size Ziplock bag, seal the bag, then cut a bottom corner off the bag to easily pipe the “mousse”.
I have served this “mousse” plain, with fruit, on meringues, and most recently in chocolate shot glasses.
This recipe is easy, yummy, and keto friendly.
