I am about to share one of my go-to dishes with you. This recipe is easy personalize to your own tastes with the seasoning and the quantity of each seasoning you add. This is a great option for a quick and easy weeknight dinner – that also makes great leftovers.

Sausage and Noodles
Ingredients:
2 pkgs sausage (your choice – I personally like Holmes Smokehouse Original Pecan Smoked)
1 pkg noodles (again your choice, I usually use penne pasta, but egg noodles are great for this too)
1 Tbs olive oil
garlic
red chili pepper flakes
oregano
black pepper
parmesan
Directions:
Start by getting a pot of water on the stove to heat (for the pasta).
Next, cut the sausage into ½ inch pieces.
When the pot of water starts to boil, add your pasta and set a timer for the cook time recommended on the package (generally 7-9 minutes).




Add the olive oil to a large skillet and begin heating it. Once it is warm, add the sausage coins and sear them well on both sides.
(Flipping them over kind of takes me back to playing with POGS back in the nineties. Does anyone else remember POGS?)
When the timer for the pasta sounds, test it for doneness, then drain the noodles and put them in a large serving bowl.
When the sausage pieces are seared to your liking, remove them from the pan and add them to the same bowl as the noodles. Leave the oil and drippings in the pan.
Add the seasoning to the oil in the pan and over low heat combine the oil and seasoning. I did not put measurements on the seasonings because they are highly personal in this recipe…I grew up in a garlic-loving family, so I probably add more than you would want to, but I don’t like really hot food so I only add about two shakes of the chili flake container.
Once the seasonings are all combined and have melded with the oil, pour the contents of the pan over the sausage and noodles. Fold together the bowl’s contents and then serve.


I set the parmesan on the table for everyone to garnish their own plate as they like.

There we have it a super easy weeknight meal. I was a very picky eater as a child and even I ate this…granted I peeled the sausage pieces out of the casing, but still I ate it.
NOTES:
-This can easily be made keto or primal, simply substitute stir fry veggies for the noodles.
-Also, you can easily add onions (I generally do, but forgot to when I made this last night). Simply dice the onion to your desired size (big enough to be picked out or small enough to be hidden if you have a picky eater in your house), sauté them in the oil after the sausage and before adding the seasonings.
